Yes in a Spritz or Sbagliato if you want more autolysis and less fruit. French 75 and Champagne Cocktail call for Champagne by name and live on that hub.
What is a Negroni Sbagliato?
A “mistaken” Negroni: Campari and sweet vermouth topped with prosecco instead of gin. Build it over ice with an orange slice.
