What is the difference between a French 75 and a Mimosa?

French 75 is gin, lemon, sugar, and Champagne. Mimosa is orange juice and sparkling wine — no spirit. Old Cuban is closer to a mojito topped with bubbles.

Do I need real Champagne?

Crémant or another dry traditional-method wine is a fair stand-in. Keep it brut so the drink does not go flabby.
