Sweet (rosso) vermouth is the modifier behind the Manhattan and the Negroni family. Keep it refrigerated after opening. Dry vermouth is a different bottle and lives on its own hub.

Manhattan (with rye), Negroni (with gin and Campari), Boulevardier (with bourbon and Campari), and Vieux Carré. Add Campari or rye to your pantry to unlock most of this list.

Can I use dry vermouth instead?

Not in these recipes. Dry vermouth is for Martinis and Bamboo. Sweet vermouth is red, richer, and vanilla-spice rather than herbal-dry.
