Do I need a full pour of absinthe?
Rarely. Sazerac and Corpse Reviver No. 2 rinse the glass and discard the excess. A few dashes are enough for Monkey Gland; the Zombie uses a measured splash.
Can I use pastis instead of absinthe?
Pastis or Herbsaint is the usual New Orleans stand-in for a Sazerac rinse. Flavor shifts, but the anise note is the point.
