History

The classic Daiquiri was created in the late 1890s near the village of Daiquirí in eastern Cuba, most often credited to American mining engineer Jennings Cox. Working the local iron mines after the Spanish-American War, Cox refined the simple local combination of rum, lime, and sugar into a balanced, ice-cold sour. Named for the nearby town, it became a Cuban staple and later a worldwide classic—bright, tart, and perfectly proportioned. (Hemingway’s famous variation with grapefruit and maraschino is a later, drier riff.)
