How to make
- Chill a highball glass.
- Leave it empty — no ice in the serving glass, which is the difference from a Tom Collins.
- Add 2 oz gin, 1 oz lemon juice, and ¾ oz simple syrup to a shaker with ice.
- Shake hard until frosty, then strain into the chilled glass.
- Top with cold soda water so a foam head rises.

History
The Gin Fizz is the late-19th-century sparkling sour: gin, lemon, sugar, and soda. It showed up in the 1876 appendix to Jerry Thomas's Bar-Tender's Guide and in Harry Johnson's 1882 manual. The Ramos Gin Fizz is the creamy New Orleans elaboration; this is the clean original. Serve it without ice in the glass so the soda can throw a foam — that is the whole split from a Tom Collins, which is the same sour poured over ice. If gin, lemon, syrup, and soda are already in the pantry, mix the fizz when you want it short and foamy, the Collins when you want it tall and cold.
