History

The Ramos Gin Fizz was created in 1888 by Henry C. Ramos at his Imperial Cabinet Saloon in New Orleans. Originally known as the New Orleans Fizz, it combines gin, lemon and lime juices, sugar, egg white, cream, orange flower water, and soda water. What made it legendary was the long, vigorous shaking required to produce its signature thick, cloud-like foam—Ramos employed teams of “shaker boys” just to keep up with demand. After Prohibition it became closely associated with the Roosevelt Hotel and remains one of New Orleans’ most iconic and labor-intensive classic cocktails.
