History

The Clover Club is a pre-Prohibition classic named after a Philadelphia men’s club of journalists and businessmen that met at the Bellevue-Stratford Hotel in the late 19th and early 20th centuries. The cocktail itself—gin, lemon, raspberry syrup, and egg white—appears in print around 1901–1910 and was popularized in New York via the Waldorf-Astoria. Its signature pink foam made it a striking choice, though it faded after Prohibition. Revived in the craft-cocktail era (notably when Julie Reiner named her Brooklyn bar after it), it remains a bright, frothy, and elegant gin sour.
